Old El Paso Fajitas with Londis Market Value Chicken

Ingredients:

2 chicken fillets from the Londis Market Price Range
1 large onions sliced into 1/4 inch strips
1 large red bell pepper sliced into 1/4 inch strips
1 large green bell pepper sliced into 1/4 inch strips
1 large yellow bell pepper sliced into 1/4 inch strips
20 mushrooms halved


For the Marinade:
3 tablespoons Oyster Sauce
1 heaped tablespoon tomato puree
1 teaspoon thyme
2 tablespoons worcester sauce
1 heaped teaspoon paprika
1 teaspoon of your choice of herbs (oregano / basil / dried red pepper, marjoram, rosemary, sage, parsley)
Generous pinch of garlic salt and black pepper
3 cloves garlic minced

 

To Serve:
Sour cream
Guacamole
Old El Paso Salsa
2 cups shredded mild cheddar cheese
Lime wedges, optional
Old El Paso Flour Tortillas
Grated Cheese
Shredded Lettuce
Chopped Cucumber
Chopped Tomatoes

 

Method:
Combine the ingredients for the marinade and place 2/3 in a glass bowl or Ziploc bag and the other 1/3 marinade in another glass bowl or Ziploc bag.
Slice Londis Market Price chicken into 1/4 inch strips.
Add Londis Market Price chicken to the bowl with 2/3 of the marinade.
Slice the vegetables and place them in the bowl with 1/3 of the marinade. Refrigerate both dishes for 2 hours or more.
Heat some Extra Virgin Olive Oil on high in a pan and fry chicken
When Londis Market Price chicken is cooked through, add the chopped vegetables and stir fry.
Wrap Old El Paso Tortillas in tin foil and heat in oven for 15 minutes.
Serve immediately with grated cheese, lettuce, chopped tomatoes, cucumber, salsa, guacamole, sour cream for a delicious dinner.
